|Friday||Toast, 1/2 cup yogurt with fresh fruits||Cilantro Lemon Quinoa Pilaf||Spring Onion Pancake/parotta, Yogurt,||Fruit Bowl|
|Saturday||Oats Upma, Ginger Coconut Chutney||Rice, Bhindi Kadhi, Easy Cauliflower Curry or Pappad||Homemade Naan with Chole Masala||Nectarine Salsa|
|Sunday||Appam with Coconut milk and Jaggery||Spicy and Tangy Red Snapper curry, Rice||Dosa and left over Fish curry||Strawberry Shrikhand|
Recipe for 2 minutes peanut Chutney
In a mixer/blender add 2 handful of roasted peanuts, 2 green chili, salt and a pinch of tamarind. Grind to the desired consistency (slightly coarse or smooth) adding water. Tada, a lipsmacking chutney is ready in 2 minutes that is loaded with proteins. This is my goto chutney during weekdays apart from Coconut chutney.
